Bacon & Smoked Gouda Quiche with Peas
Quiche has to be one of the most versatile foods out there - it is great for breakfast, brunch, AND lunch! It is delicious served warm or at room temperature, and the flavor combinations are endless. I think quiche is one of the best foods for entertaining for all these reasons. I have made this quiche recipe for brunches with friends and family and it is always a hit.
Now listen - I am really not a huge fan of peas. I think adding peas is the quickest way to ruin a dish, but the peas really do something to this recipe. I’m not sure what exactly lol but just trust me. PLEASE keep the canned peas away from this quiche. Ain’t nobody got time for that.
Ingredients
6 strips bacon
5 large eggs
1/2 cup heavy cream
1/2 tsp. kosher salt
1/4 tsp. black pepper
1/4 tsp. dijon mustard
1/2 cup grated smoked gouda cheese
1/4 cup frozen peas (do not use canned peas for this)
1 frozen deep dish pie crust
Recipe
Preheat oven to 350 degrees. Line a baking sheet with aluminum foil. Place 6 strips of bacon on the sheet and bake for 20-25 minutes or until the bacon is crispy. Remove the bacon from the oven and transfer to a plate lined with paper towels. Set the bacon aside and allow to cool.
Meanwhile, in a large bowl, whisk eggs with cream, salt, pepper, and dijon mustard until fully combined.
Crumble the bacon into the egg mixture. Add the gouda cheese and peas. Stir to combine.
Line a baking sheet with aluminum foil and place the frozen pie crust on the sheet. Transfer the egg mixture to the pie crust. Make sure the egg mixture is evenly distributed in the pie crust.
Bake at 350 for 30-35 minutes until the center is set. If the crust is browning too quickly, cover the crust with foil.
Remove the quiche from the oven and allow to cool on a wire rack. Serve with coffee, mimosas, and a side salad for the perfect brunch.
